If you are a person who likes to celebrate Halloween from morning to night, I've got you covered in the morning. Let's start the Halloween morning with a taste of fall with some quick apple tarts and my lazy version of a nutty pumpkin spice cappuccino.
I hate to say it: I have no patience for the kitchen. As much as I love how food tastes when made entirely from scratch, I am the type of person who looks for ways to cut down on time while still getting that "made from scratch" taste.
Apple Tarts
Ingredients:
Two apples (I like Honey Crisps)
One pack of puff pastry sheets
Sugar
Cinnamon
Apple jam (optional)
Cooking Instructions:
Peel, core, and slice the apples (about 1/4" thick)
Place the apple slices in a sugar and cinnamon water bath (~1/4 c of sugar and 1 tsp of cinnamon). Microwave for 2 mins and let the apples soak a bit while you prepare the pastry sheets.
Roll out the pastry sheets and cut them into squares (each sheet should give 9 squares)
Place 5-6 apple slices onto each square (optional for extra filling: add a tbsp of apple jelly/jam under the slices)
Sprinkle the apples with sugar and cinnamon.
Place another pastry square on top. Seal the edges with a fork and cut three slits on the top to let the pastry ventilate.
Place pastries onto a cookie sheet lined with parchment paper.
Bake according to the instructions on the box of the pastry sheets.
Nutty Pumpkin Spice Cappuccino
Disclaimer, I am not a professional barista, but I do love coffee. The key to making this nutty drink is using oat milk, chicory coffee, and pumpkin spice. Just add the pumpkin spice (three taps or as much as you'd like) to the espresso pot with the coffee grounds, heat up and froth some oat milk, add sugar to taste, and you're done. Easy peasy.
